While farming is his primary passion, Mike (see “Our Story” below) has over 50 years of “off again,” “on again” baking experience.
As a teenager, he apprenticed with a nationally known Master Baker, and he has extensive experience in American, German, Italian, and French breads and pastries.
His passion is using Organic and all-natural ingredients, including products grown on our farm. We use 100% organic flour sourced from Lindley Mills in North Carolina.

We raise our beef naturally, with only grass and hay. Our herd has a unique genetic mix, developed over many years, to produce cows that thrive on grass without corn or other types of grain, with a delicious, natural flavor. Once or twice a year, we have extra beef that we sell to a limited group of customers.

Hello! We are the Hillerbrand Family (Mike, Sigrid, Audrey, and Carl), owners of Blue Sky Meadows Farm located in the mountains near historic Jonesborough, Tennessee.
We manage a very special place that we share with our customers (whom we call our “friends”). Close to town, but surrounded by majestic mountains, natural meadows, and peaceful tranquility, we have created a space where you can relax and get away from it all without big travel or stress.
We raise livestock, fruits and vegetables, and flowers all grown as close to nature as possible.
We started farming more than 15 years ago on small piece of leased land in North Carolina. Before long, we were selling grass-fed lamb and fresh raw milk from our grass-fed dairy cow herd to the surrounding community! We also opened a small roadside stand, where we sold delicious ice-cream and customers could view (and pet) our livestock.
Five years later, life threw us a bit of a curveball and we lost our farm lease to housing development! After a long, 5+ year search for a property to call our own, in 2021, we purchased our current property and Blue Sky Meadows was born!
